Most microorganisms do not grow in honey, so sealed honey does not spoil, even after thousands of years
The colors of honey varies from time, place and the time the bee produces it. If it is a neat and conducive atmosphere, the honey looks whitish in color. Sometimes the nature of the flower determines the color of the honey e.g if the flower is yellowish, the honey looks yellow too. The same thing applies to the taste and scent.
